Sauces
Ingredients:
1 medium sized pepper
2 onions
2 tomatoes
2 carrots
2 stalks of celery
1 bunch of parsley
1 tsp sugar
½ cup of "Sapore di Modena"
Paolo Rustichelli's Traditional Balsamic Vinegar of Modena
salt (to taste)
water
Preparation:
Wash and cut vegetables in coarse pieces. In a sauce pan, boil the vegetables with water, "Sapore di Modena", salt and sugar until the water has completely evaporated. Let cool and then put in a bowl, making sure that everything is well-covered with olive oil. Add a couple teaspoons of Paolo Rustichelli's "Vecchio" Traditional Balsamic Vinegar of Modena right before serving.
